My Tacos without the Packet
We eat tacos a lot. It is one of our favorite dinners. We never use the packet of taco seasoning because if you take a look at the ingredients in that thing you won't recognize most of them. Making tacos is super simple. I've made taco meat so many ways. I've added everything from cayenne pepper to garlic to paprika to oregano but last week, someone had forgotten to replenish our pantry and we were out of pretty much everything. We didn't even have a regular onion. So I worked with what we had and I swear, these were the best tacos we ever had and I made them again this week (because I still never made it to the grocery store). Check this out.
Ingredients for the taco meat:
1 lb of ground meat (I use 80/20 grass-fed ground beef, but you could use turkey or chicken)
1 tbsp chili powder
1 tbsp cumin
1 tsp course salt
1-6 tsp of Hot Sauce (I like our tacos HOT - so I add 6 tsp, i.e. 2 tbsp, but honestly, most people probably don't like it this hot, so you're going to have to figure this out yourself)
3 scallions (chopped)
1/2 cup of water
Fixings for the Tacos (whichever ones you like) :
Taco shells (soft or hard or both)
Sliced Black Olives
Put skillet on burner set to medium high heat. If you're using ground beef you don't need to add anything to the pan but if you are using turkey or chicken you'll want to drizzle in some olive oil or a little bit of coconut oil. Add your meat to the hot pan - DO NOT BREAK IT UP. Flatten it so its distributed throughout your skillet and allow it to brown before you break it up. This makes a huge difference. Once its started to brown around the edges, use a spatula to break up the meat. Move it around the pan so that it browns all over, lower the heat to medium and add your chopped scallions.
Now you add all of your spices. Stir and lower heat to medium low. Allow to simmer and continue to stir. After a couple of minutes, lower heat to low and cover. Allow to cook on low for 30 minutes to an hour - this lets all the flavor soak in and cooks down the spices.
Voila! You've got some delicious taco meat. Serve with all of the fixings.
